Banana Oat Good for you Cookies

So I was inspired after reading through some recipes online to just make a simple cookie. And not just simple, but one that's relatively good for you. So here it is: a banana oat coconut chocolate chip cookie. Yummm.

INGREDIENTS
1 1/2 mushed up bananas
1 cup (or so) of oats
1 Tbsp (or so) of flaked coconut
1/2 cup (or so) of chocolate chips
1tsp of cinnamon

DIRECTIONS
1. Preheat your oven to 350
2. Mix all the ingredients together.
3. Put about tsp sized blobs of batter on a greased or parchment paper lined cookie sheet.
4. Bake them for about 20-25 min. Check on them after 10 min. and then about every 5 min (since everyone's oven is different and because I encourage you to mix it up and add whatever else you want in that batter).
5. Take out the cookies...and Enjoy!!

*This is a pretty simple recipe, and don't be afraid to do your own thing. Add other things to it (nuts, dried fruit, etc) and mix up how much of each ingredient works for you...want more banana? Do it! Think it needs more oats? Do it! Add applesauce if you're out of banana!

New Obsession = Ajvar + avocado

So I just can't seem to get enough of this lately, and as a bonus, it's healthy! Spread some Ajvar (roasted vegetable spread) on a slice of whole grain, low carb, sprouted grain, or whatever kind of bread or cracker you like. Then top it off with slices of avocado and enjoy! Avocado is a super healthy fat that you should enjoy on a daily basis...and it's yummy :)

This is a great quick breakfast or in between meal snack. Filling & delicious.
